Spiced CordyChi® Chicken Mole

This is a hit at company potlucks and Taco Tuesdays in the office. For best results slow cook over night in a crock pot until you get a shredded consistency. Benign neglect works for more than just growing mushrooms!

For 6 servings or more:

  • 1–2 lbs skinless/boneless chicken breasts

  • 1 large onion, chopped

  • 1 clove garlic, chopped

  • Variety of spicy and sweet chili peppers to taste (for example: one each pasilla, jalapeno, bell, habanero)

  • 2 tablespoons peanut butter or ground nuts of choice

  • ½ cup CordyChi® Spiced Hot Chocolate Mix

  • 1 can chunky stewed tomatoes

  • 1 cup Broth; vegetable, chicken or better yet mushroom

Fry chicken breasts in a skillet for 10–15 minutes. Add onion, garlic and peppers for final 5 minutes. In the slow cooker combine all other ingredients and blend well. Add cooked chicken and veggies. If sauce does not cover chicken add more broth. Cook overnight on low heat. Serve with tortillas or on a bed of rice. Great with sweet potatoes!
